HomeMade Apple Pie
Ingredients:
• 300 g spelled flour (white) or wheat (regular cake)
• 200 grams of potato flour (or rice flour or cornstarch)
• 1 teaspoon cinnamon
• 150 g sugar (I used raw sugar cane, but can also be white)
• 300 g butter (chilled)
• 1 small egg + 1 large egg yolk
and:
• 2 kg of apples for apple pie
• 1 cup sugar (I used raw sugar cane, but can also be white)
• 1 teaspoon cinnamon
• 3 / 4 cup raisins
• topping: a few tablespoons of sugar cane milled into powder and mixed with cinnamon
• toffee sauce (honey can replace sugar) and ice cream (optional)



- On the pastry board sift both flours, add sugar and chopped cold butter into pieces. Butter knife, chop the rest of the ingredients into small pieces, then rub them with your fingers. Add egg and yolk and knead the dough quickly. Divide it into 2 parts, wrap in a bag and put in the fridge for 1 hour.
- In the meantime, prepare the apples. Peel, cut into quarters, remove cores. Then cut them into even smaller pieces.
- In a large wide pot put the apples, add sugar and cook for several minutes, stirring occasionally, until apples are tender but still remain in pieces. Stir in raisins, cinnamon, sugar (if you are using) and set aside.
- Preheat the oven to 180 degrees. Roll out half the dough (preferably between two sheets of baking paper)
- Insert the form of dough in the preheated oven and bake for 25 minutes until golden brown. Remove form the oven.
- At the bottom put apples on top of the grate, the rest of the chilled dough and insert into oven. Bake for 60 minutes until golden brown. Cool, sprinkle with sprinkles, serve with toffee sauce, ice cream.
